2 cups cubed zucchini
2 cups cubed carrot, peeled
1 lemon, juiced
1/4 cup toasted cashews
20 mint leaves—optional
8 butter lettuce leaves
1) Process all the ingredients, except for the lettuce, in the food processor,
until the desired consistency is reached.
2) Put some of the mixture inside each lettuce leaf and serve.
