Nutrient-Rich Tomato Mushroom Potato Delight
This great is a nutrient-rich meal to get going before you leave for work. Set the crock pot to 8 hours on low and enjoy when you get home.
4 Large Potatoes, sliced or cubed
1 -8 Oz box of cherry tomatoes sliced in half
2 big bunches of broccoli -cut
3 TBS VegeBase or vegetable broth – low salt
4 cloves of garlic -minced
1 pinch of sea salt (optional)
2 Cup water
1 Cup mushrooms – sliced
Pour water in bottom of crock pot, mix in garlic and VegeBase. Slice tomatoes, mushrooms, potatoes and broccoli (potatoes and tomatoes in first) Cover and set the time on crock pot for when you need it.. 4 hours if you want it for lunchtime – up to 8 hours if you want it to simmer while you are at work.
