Portobello mushroom burgers, sometimes also spelled portobello, are actually the same species as a crimini mushroom. Generally, the mushroom is called a crimini when small and a portobello when its cap has grown to about four to six inches in diameter. These large brown mushrooms have a meaty texture and can be grilled, roasted or used as an ingredient in other dishes.
Ingredients
4 Large Portobello Mushrooms – Stemmed
1 Cut into 4 thick slices Ripe Tomato
4 Whole wheat buns
2 Halved, seeded and de-veined Red Bell Peppers
1/2 to 3/4 Cup Herbed Vinaigrette
1 Large – Cut into 4 thick slices Vidalia Onion
Instructions
- Prepare a charcoal or gas grill. Grill the mushrooms and peppers over medium-hot heat, basting with the vinaigrette until softened, about 3-4 minutes per side. Add the onion slices, baste with Vinaigrette, and grill until softened, about 5 minutes a side (Turn the onion slices carefully so that they don’t fall apart)
- Lightly toast the buns, then layer with the grilled portabello, red peppers, onion, and tomato.
- Serve with Mango Ketchup or any other favorite condiment.
