Apricot Brown Rice

Apricots are the yellowish-orange fruits that belong to the family of Rosacea. Other fruits that belong to the same family are peach, pear and apple. In appearance and size, Apricots are small in size. However, do not let their tiny size fool you. With low fat and plenty of fiber, apricots are packed with ample doses of other essential vitamins. Though apricots are summer fruits, who is to say you cannot enjoy them in winter season. This recipe apricot brown rice is not just delicious, substantial and easy to cook but very flavorful. Prefect as dessert too!
Apricot Brown Rice

2 cups brown and/or wild rice
1/4 teaspoon ground cumin
1/2 teaspoon coriander
1/2 teaspoon cinnamon
1 cup unsulfured dried apricots, coarsely chopped
3 cups water
1/4 cup unhulled sesame seeds

 


Cook brown rice, spices, and dried apricots with water on low heat for 35 minutes. Add sesame seeds and simmer for 10 more minutes or until rice is cooked.
