This Black Bean and Corn Salad recipe is very simple and refreshing!!
This black bean and corn salad recipe is Simple Quick & Easy Recipe. It’s rich in resistant starch (the fiber in black beans which is only half digestible, that gives you the fiber and the micronutrients but only on 50-70% of the calories and corn, the same! Add in all these other whole foods, plant based, nutrient rich ingredients and you have a dish that will satisfy your body for hours and I mean many of them. Don’t expect to be hungry anytime soon after eating this and it’s NOT even calorie rich! It’s Nutrient Rich!
Ingredients
5 Cup canned or cooked black beans
1/2 Cup good-quality vinaigrette, homemade or store-bought
2 Cup cooked corn kernels, preferably fresh
3 large bell peppers, preferably one each green, red, and yellow cut into narrow strips
2-3 scallions, thinly sliced
1/4 Cup chopped fresh parsley or cilantro
2 Tbls minced fresh oregano, or 1 1/2 teaspoons dried
1 tsp ground cumin
1/2 tsp ground coriander
1 Juice of lime
Instructions
Combine all the ingredients in an attractive serving container and toss together thoroughly. Use enough vinaigrette to coat and flavor the ingredients but not drench them.
This can be made several hours ahead and refrigerated (covered) until needed. Bring to room temperature to serve.
