As researchers continue to wage war against cancer, many have begun to focus on what could be the most promising ammunition to date: diet.

“The easiest, least-expensive way to reduce your risk for cancer is just by eating a healthy diet,” says Rachael Stolzenberg-Solomon, PhD, MPH, RD, a researcher at the National Cancer Institute.

When it comes to a diet rich in cancer-fighting substances, most experts agree that it should consist of a predominantly plant-based diet. “If you have two-thirds of plant food on your plate, that seems to be enough to avoid excessive amounts of food high in saturated fat,” says Karen Collins, RD, nutritional advisor for the American Institute for Cancer Research.

You have been hearing the Atkins camp for years tell you that carbohydrates are evil. That carbohydrates will make you fat. That you need to eat meat and animal fat if you want to lower your cholesterol, control your hunger and lose body fat. South Beach softens that claim by adding back in more complex carbohydrates but at the end of the day you still have a meat protein driven eating plan with out the predominance of vegetables and fruits essential for good health.

So many people shun vegetables because of taste. Yet, they have no qualms seasoning up the meat they eat and cooking it in a variety of ways. Why not do the same to vegetables? Buy fresh vegeatables that are in season, and frozen (not drowning in a sauce, please!) ones that are not. Use seasoning. Try different cooking methods. Try eating them raw! And if your only exposure to vegetables is what comes out of a can, then you are really in for a treat.
